Meet Chef Alicia

Executive Chef & Owner

Alicia Charolle, founder of Copper & Thyme, spent nearly two decades in the financial services industry, before making a bold career change to pursue her lifelong love for food and people.   She graduated with her professional chef degree from The Cambridge School of Culinary Arts in 2021.   Shortly after graduation, she started her personal chef business in Boston.

Her passion for cooking was deeply rooted in her childhood experiences, where she developed an appreciation for diverse cuisines and cultures during her travels in Asia and beyond. Upon relocating to Charlotte, she discovered the vibrant culinary scene that the city had to offer, feeling an instant connection and sense of belonging.

As a personal chef, antique copper pots have always had a special meaning to Alicia, since they are often passed down from one generation of cooks to another. She hopes to bring a little bit of “home” and tradition to her clients. 

Homestyle French, Italian and Mediterranean dishes are her signature style of cooking and using simple, fresh herbs like thyme to give a dish bold flavor.  

You can catch Alicia always testing new recipes, and finding new gourmet stores and shops for the finest local ingredients to bring her clients custom meals that fit their lifestyle.
